The name says it all. Made with coconut, pecans and brown sugar, these bars are a family favorite that has been passed down through at least four generations and will hopefully be made for many more.

  • 1 ¼ cup flour
  • ½ cup butter
  • 2 tbsp brown sugar aka "dessert spoons"


  • 2 eggs slightly beaten
  • 1 ½ cup brown sugar
  • ¼ tsp salt
  • 1 tsp vanilla
  • 1 cup coconut
  • 1 cup chopped pecans (or other nuts)


  • Preheat oven to 375°
  • Mix base ingredients together until crumbly. Then pack into a shallow 9x9 inch pan.
  • In a separate bowl, mix together eggs, brown sugar, salt and vanilla. Then stir in coconut and nuts until fully mixed in.
  • Pour mixture over the base.
  • Bake for 25-30 mins or until browned on the bottom (if you use a glass dish and can see) or till the top is a little toasty. In the end, it should end up with a flakey crust on the bottom, gooey middle layer and then a crispy top.   
  • Let cool completely before cutting into squares.
